In 2024 we took over a small plot of around a thousand vines just outside Ross on Wye in south Herefordshire. It consists of a number of different varieties including Madeline Angevine and Pinot Noir Precoce which make up the blend for this wine. The Madeline was planted in 1991 therefore are some of the oldest vines I've worked with.
2025 will go down as one of the best growing seasons the UK witnessed. A perfest frost free start let into beautiful long summer day with perfect conditions for flowering therefore an excellent yield was also achieved.
Picking started very early with the Pinot Noir Precoce at the end of August. These grapes were destemmed left on the skins for 2 hours then pressed. Fermentation started naturally. Into late September we picked the Madeline Angevine on arrival at the winery the grapes were crushed and left on the skins for 3 days before pressing. The two varieties were blended together and then bottled just before the end of fermentation to create a lightly sparkling style.
The wine rested over the winter before disgorging in spring of 2026.
The vineyard has a lively population of rabbits which is where the name comes from!
